Zucchini Pie

Nowadays, my mom finds herself always asking the same question to my sister and I everyday: "What should we have for dinner tonight?" Likewise, my sister and I always reply with, "I don't know." A lot of families find themselves having the same problem where they/we always wind up having the same thing as last week. But, I am here to help your family come up with something healthy, cheap, and fun for dinner each night. Down below is one of my favorite recipes that my family always has but never gets sick of. Most of the ingredients can also be found in your local garden (if you have one in your backyard like my family). Therefore, (even if you don't have a garden), you can buy these ingredients for low prices at your local supermarket.

The Recipe


  • 3 cups diced unpeeled zucchini
  • 1 large onion chopped
  • 1 cup parmesan cheese
  • 1/2 cup cheddar cheese
  • 1/2 cup canola/vegetable oil (canola is healthier)
  • 1 cup bisquick mix
  • 4 eggs beaten 
  • 3-4 teaspoons parsley
  • garlic powder (however much desired)

Grease 9" pie plate. Combine all ingredients mixing until zucchini are just coated with batter.
Bake at 350 degrees for 35-40 minutes.


The Benefits

  1. Easy and quick to prepare then just remains in oven while you can do other things.
  2.  Very filling and great for a big family or if recipe is halved, great for one or two people as a light, healthy dinner. 
  3. Fulfills your "green intake" for the day and does not have much other unnecessary, unhealthy ingredients.
  4. There is protein in the pie from the eggs so therefore, it fulfills the requirements of every meal in the pyramid shown below (except the fruit portion).
