Healthy Strawberry muffins
A couple of weekends ago, I was browsing YouTube and came across a video that consisted of healthier recreations of meals. I tried to make them and with every success, comes failures. I have the recipe for these delicious yet healthy muffins as well as tips for the common house baker/chef. Down below I linked the recipe, listed the tips I have and the benefits to these muffins compared to other strawberry muffins.
Recipe:
2.5 cup of oats (must use old fashioned)
1 cup low fat greek yogurt
2 eggs
1/2 cup of sugar
1.5 tsp of baking powder
1/2 tsp baking soda
1.5 strawberries, diced and 1/2 cup for top of muffins

Benefits:
- You can get your fruit intake required for each day.
- Get your calcium from the yogurt.
- Less carbs because of no flour.
- They taste fresher than muffins bought at other stores.
Tips:
- Although the video says you can't use cupcake tins, you actually can use them. Just make sure to spray the inside with pam or non-stick spray/olive oil.
- Even if the muffins don't seem done, remember that there's no flour inside but rather yogurt and fruit therefore it should look more like oatmeal/ the photo below.
