Healthy Enchiladas

Image
Many people might think that since enchiladas are a juicy Mexican custom, they are unhealthy and not a good thing to eat when trying to lose weight or having a specific diet plan. However, any food can be made into something healthy but still delicious. The recipe down below is a perfect example of how a cheesy and fatty dish can enhanced to incorporate healthier selections. Also in the picture below, i added some tomato and cucumber salad to the meal to get even more vegetables and to freshen the dish up. I also included steamed broccoli with a little bit of garlic because it is extremely easy to make and it makes the dish even more diet-friendly. The Recipe 1 can Campbell's Condensed Cream of Chicken Soup or 98% fat free Cream of Chicken Soup 1/2 cup sour cream 1 cup Pace Picante Sauce 2 teaspoons chili powder 2 cups chopped cooked chicken 1/2 cup Monterey Jack Cheese 6 each flour tortillas, warmed 1 small tomato chopped (half a cup) 1 green onion sliced (about 2 tab...

Another Healthy and Interesting Breakfast

Image
If you've ever gotten bored or tired of regular eggs and toast, then this is the breakfast for you!! I know that during the summer when I'm waking up to the same thing, I no longer look forward to that delicious meal. So one day, I was watching some YouTube videos and I saw in a morning routine that someone had combined your ordinary toast with an egg. Soon enough I was making this super easy breakfast and actually looking forward to getting up and making it. Down below, I have listed the simple "recipe" and the benefits to this meal. Additionally, there are some tips when making this or any egg recipe. The Recipe One piece of bread (for a healthier option, get a loaf that says exactly "100% Whole Grain") One egg The Benefits Quick breakfast for on the go, if desired. Combines the healthy carbohydrate in the morning for energy and the protein from the egg. Therefore, almost fulfilling the requirements of the health plate/pyramid (shown to the...

Quick and Easy Breakfast

Image
Most people these days are always on the run whether it be for work or school, it seems no one ever plans time for breakfast. However, while popular belief may say coffee will wake you up enough for the rest of the day, this is actually completely false and extremely unhealthy. Your body is a machine and when it doesn't get the proper nutrients in the morning, it will not work to the usual levels. While coffee may have caffeine, this will actually make your body more hyper than it should be. If you don't have breakfast or some type of protein for breakfast, your body will assume you should be sleeping. When the caffeine wears off then, your body will be left feeling extremely groggy and exhausted. Because while your brain may have been working extremely hard, your body was unable to recognize that therefore your different levels of energy will not be consistent. One breakfast I would recommend to people who don't have time to just sit down and enjoy breakfast, is an egg...

Pumpkin Muffins

Image
Every fall season, my mother and I are always in the mood to lose weight or just get fit, mainly because it's a new school season therefore a new "year." However, with all of the different options for fall desserts, it becomes extremely difficult to stay on track with your diet. Whether it's pumpkin pie, candy corn, pumpkin pie, or a pumpkin spice latte from Starbucks, it can be extremely difficult to find substitutes for these desserts. A lot of people say replace sweets with fruit because they taste just as sweet, but nutritionists say that you should try to just have one fruit per day. The reason being that although fruits may be healthier than sweet unnatural desserts, but they still have lots of sugar in them. What my family has always substituted for these desserts are pumpkin muffins. Now these may not seem extremely healthy, but they are much better than extremely sugary desserts. Down below is the pumpkin muffins recipe. Hope you enjoy them!! The Recipe: ...

Zucchini Pie

Nowadays, my mom finds herself always asking the same question to my sister and I everyday: "What should we have for dinner tonight?" Likewise, my sister and I always reply with, "I don't know." A lot of families find themselves having the same problem where they/we always wind up having the same thing as last week. But, I am here to help your family come up with something healthy, cheap, and fun for dinner each night. Down below is one of my favorite recipes that my family always has but never gets sick of. Most of the ingredients can also be found in your local garden (if you have one in your backyard like my family). Therefore, (even if you don't have a garden), you can buy these ingredients for low prices at your local supermarket. The Recipe 3 cups diced unpeeled zucchini 1 large onion chopped 1 cup parmesan cheese 1/2 cup cheddar cheese 1/2 cup canola/vegetable oil (canola is healthier) 1 cup bisquick mix 4 eggs beaten  3-4 teaspoons par...

A couple of weekends ago, I was browsing YouTube and came across a video that consisted of healthier recreations of meals. I tried to make them and with every success, comes failures. I have the recipe for these delicious yet healthy muffins as well as tips for the common house baker/chef. Down below I linked the recipe, listed the tips I have and the benefits to these muffins compared to other strawberry muffins. Recipe: 2.5 cup of oats (must use old fashioned) 1 cup low fat greek yogurt 2 eggs 1/2 cup of sugar 1.5 tsp of baking powder 1/2 tsp baking soda 1.5 strawberries, diced and 1/2 cup for top of muffins (copied from https://www.youtube.com/watch?v=JeXoqu5atN0  ) Benefits: You can get your fruit intake required for each day. Tips: Although the video says you can't use cupcake tins, you actually can use them....

Homemade pizzas!

Image
While making pizzas from scratch may seem like a daunting task, my family and I were able to make these within as short as four-five hours last weekend. We didn't even have a specific recipe until we searched for one on the internet. Now, making pizzas may not be a daily activity since most people have busy lives. However, while making these pizzas on the weekend, you can get lots of other tasks accomplished, for example, while the dough was rising, my sister and I decided that we would ride our bikes and get our exercise for the day/week. The beauty of making homemade pizza is obviously the health benefits compared to take-out and the fact that you can maintain a healthy lifestyle while making it. I got the recipe from King Arthur Flour and I will put the link down below but, contrary to popular belief, pizza has more health benefits than one might think. I have listed all of the benefits of making homemade pizza down below the recipe. The Recipe 2 teaspoons activ...
